Executive Chef, Joe Holberg and Sous Chef, Christopher Coan
Joe Holberg has over 12 years of culinary experience working and living in Seattle and many notable travel destinations. Joe came by the art of food quite naturally by growing up in Issaquah with a family of bakers at Puget Sound Baking Company. Joe graduated from Seattle Culinary Academy with both culinary and pastry chef degrees. After graduation, he worked in the kitchens of many diverse Seattle restaurants Rovers, Eva, and Ponti Seafood Grill. After working as a pastry chef at the four diamond restaurant, Rovers, he took a cooking internship in the south of France. After returning to Seattle from France, he worked at Eva and the Virginia Inn as their Sous-Chef. He then traveled extensively as a chef on private yachts in the Caribbean and Mediterranean where he enjoyed creating many different cuisines. He has now returned to Seattle as Executive Chef for the Virginia Inn. Joe is passionate about using his background in cuisine and in creating an excellent dining experience.
